The company was founded in July 1989.It has been in business for 35 years.

The chef patissier, Hitomi Watanabe, makes her special sweets in this workshop.

In fact, the Ann’s store on the first floor was founded 35 years ago by Ms. Watanabe’s mother.

Hitomi was originally a cook with experience working in restaurants, but one day she received a request to make sweets using ingredients from Ann’s restaurant, so she began making sweets as well.

At first, they converted their home into a workshop and wholesaled to Ann’s store and other customers.
After 10 years of this style, in October 2013, we set up a full-fledged workshop on the second floor of Anne’s store and started our business as “Patisserie Apareil.The workshop is located on the second floor of Anne’s shop and is now called “Patisserie Apareil.

The restaurant’s name “appareil” is a French culinary term meaning ” liquid dough mixed with eggs and milk.
Specifically, it is the kind of dough that is poured into puddings, quiches, and tarts.
The literal translation also means “something prepared” or “a trick”.

I named her after my grandmother because I wanted a name that would be easy for her to remember.
Since the first letter is the first word in the alphabet, we also hope that it will catch the attention of many people.

Eggs…heirloom eggs fed on vegetables and other produce grown on Mr. Masuda’s farm in Fukagawa City
Sugar: Raw sugar made by pressing and squeezing sugarcane from Tanegashima Island and boiling it down to crystallize it, which retains its mineral content.
Fresh cream…pure fresh cream made from 100% fresh milk produced in Tokachi, Hokkaido
Milk: 100% fresh, raw milk from Ebetsu Kobayashi Farm, which is produced from the soil.
Flour…Several kinds of Hokkaido wheat are used according to the type of pastry to be made.
Rice flour: Specially grown Oborozuki and Yumepirika from Shinshinotsu-mura, Hokkaido, and Nanatsuboshi from Hokkaido are used according to the type of pastry to be made.
Fruits…We use Hokkaido-grown fruits as much as possible when they can be harvested in Hokkaido.We sometimes go directly to nearby farmers to pick fruits.
Baking Powder…Aluminum-free and GMO-free baking powder is used.
・Tofu and soy milk: Tofu is made from 100% Hokkaido whole round soybeans, and soy milk is made from 100% domestic soybeans and unadjusted soy milk.
Other…Organic, fair trade and other chocolates, nuts and dried fruits are used.All colorings are made from vegetable powder and other natural ingredients.

Although it may look heavy, when you put a fork in it, it is very light and melts smoothly in your mouth.It is moderately and elegantly sweet and rich in chocolate.I sliced it and froze it at home, but it is so good that it will soon be gone.

In the foreground, left, is the “Rice Flour Carrot Cake,” which is wheat- and milk-free.
The cake is filled with grated organic carrots (grown in Bihoro, Hokkaido at the time of our visit) and flavored with walnuts, raisins, cinnamon, and rosemary.The top is covered with coconut frosting cream.
The natural sweetness of carrots and slightly sweet and sour raisins are combined with just the right amount of spice.
Neither the raisins nor the spices were too assertive, as if they were enhancing the deliciousness of the carrots.
