But they are still few and far between.
If you see a cake like this here, you can’t help but bring it home (laughs).

Well, we asked the staff to take out the cake, and just as we were about to pay the bill…what a surprise!

When it comes to making vegan and gluten-free cakes, I think the tricky question is
“how to make it fluffy”
.
The general concept of sweets is that without eggs, a fluffy sponge would be impossible.

However, Natsudai-san is still wonderful for breaking through that concept and developing such a cake in such a brilliant way.

The sponge made with organic cocoa was light and had the perfect balance of bittersweet flavor and minimal sweetness.
And the caramel soymilk cream and banana were so well matched that I couldn’t stop holding my fork (lol).
I devoured one cut in no time.
